Penne alla Cognac
This is my all time favorite pasta dish! It is my Dad's recipe and he cooked it for my rehearsal dinner (we had about 30 people). It is easy to make, impressive to watch because you set it on fire, and it is delicious.
Linguine and White Clam Sauce
This dish is made with fresh live clams and lots of garlic and parsley. It is a very simple yet rustic dish and is served best with a big loaf of crusty bread to soak up the sauce.
Fettuccine Marco Polo
Fettuccine is so simple to make, it is black pepper, butter, heavy cream and parmesan cheese. When served Marco Polo style you add curry powder and golden raisons. It is just a nice twist on a classic dish we all loved as kids...or at least I did!
Spaghetti and Meat Sauce
Again, my Dad's recipe...he is an amazing chef. The secret to this is using ground veal because it is so lean it renders little to no fat. Good Italian canned tomatoes are also really important to making a sauce with a sweet rather than bitter taste.
Chicken and Pesto Pasta Salad
This is a quick, easy and tasty pasta salad. It uses store bought ingredients and literally gets mixed together and chilled. It is perfect for parties, potlucks, picnics or tailgating.
