Celeste's Fish Tacos with Black Bean Salsa

4-6 filets of Tilapia
Juice from 2-3 limes
2 T olive oil
Handful of fresh chopped cilantro
Dash of Cayenne pepper
Dash of Paprika
Dash of Cumin

Marinate fish in above ingredients for 30 minutes to one hour.
Grill fish in grill pan indoors or on grill outdoors until fish is white and cooked thoroughly.

Serve fish in tortilla with sour cream, lettuce, salsa, shredded cheese and
black beans (recipe follows). Be sure to pack some tostado chips as well.

Black Bean Salsa
2 cans black beans, rinsed and drained
1 4oz cans sliced black olives, drained
1 4oz cans chopped black olives
6 scallions chopped
5 cloves of chopped garlic
1 tablespoon cilantro
4 tablespoons olive oil
3 tablespoons balsamic vinegar
2 limes, juiced
1/2 teaspoon salt
1/2 teaspoon cumin
1/4 teaspoon cayenne pepper
1/4 teaspoon black pepper

Mix all ingredients together and refrigerate until ready to serve.
